Easy Peanut Brownie Sundae Recipe

Mr Tom produce nutty bars to satisfy your peanut cravings! They asked us at Nutty Pear to get creative with their bars and make a nutty dessert, here's what we came up with.. And good news; it's super easy and delicious...
With so many ideas flowing through our head it was pretty hard to decide what to make! A nutty brownie, flapjack or cake?! But in the end we went for a peanut brownie sundae (all the yes..), using an easy Jamie Oliver's recipe to help us create simple yet yummy brownies. 

What you'll need:

250 g unsalted butter
200 g good-quality dark chocolate (70% cocoa solids)
80 g Mr Toms peanut bars (2 x bars)
80 g cocoa powder
65 g plain flour
1 teaspoon baking powder
360 g caster sugar
4 large eggs
4 tablespoons of vanilla ice cream 
1 tablespoons chocolate spread
2 tablespoons of toffee sauce
Squirty cream

How to make the masterpiece:

Preheat your oven to 180°C/350°F/gas 4. Line a 24cm square baking tin with greaseproof paper. Melt the butter and the chocolate and mix until smooth in a heatproof bowl over some simmering water. Chop up the Mr Tom nut bars and stir together.

In a separate bowl, mix together the cocoa powder, flour, baking powder and sugar, then add this to the chocolate and Mr Tom nut mixture. Stir well and then beat the eggs and mix in until you have a silky, yet nutty, consistency.

Pour your brownie mix into the baking tray, and place in the oven for around 25 minutes. You don’t want to overcook them so, unlike cakes, you don’t want a skewer to come out all clean. The brownies should be slightly springy on the outside but still gooey in the middle. Allow to cool in the tray, then carefully transfer to a large chopping board and cut into squares.

Get your chosen sundae glass and layer the brownie mix with ice cream, cream and toffee sauce until you fill it up. Finish by pouring some melted chocolate spread over the top and/or some more toffee sauce. For the final touch add a couple of Mr Toms chocolate peanut bars and use them like wafers!
