Caerphilly Cheese Tart Recipe & Welsh Hamper Giveaway!


To celebrate St David's day (that's today if you didn't know!) I've teamed up with Food & Drink Wales to highlight the wealth of fabulous food and drink that comes out of Wales! In this post I'll be showing you how to make a Caerphilly cheese tart, with traditional Caerphilly cheese which has recently won a PGI (Protected Geographical Indication) status! Caerphilly Cheese Tart Recipe

This recipe makes for a lovely light lunch or starter, it takes about 40 minutes to prepare (including 20 minutes cooking time) and it serves six. The recipe is extremely easy to follow and it's pretty fool-proof, I also have to say that it was very delicious!

What you'll need:

Ingredients:
1 tablespoon olive oil
15g butter (Welsh is best if possible!)
2 large red onions, finely sliced
2 tablespoons of light muscivado sugar
3 tablespoons of balsamic vinega
450g ready-made puff pastry
100g Caerphilly cheese, crumbled
1/2 red and 1/2 yellow pepper, sliced
75g black olives, pitted and chopped (optional)
1 tablespoon of olive oil (for the dish before putting in the oven)
Some shredded basil leaves to garnish (optional)
Some plain flour for rolling out the pastry

Utensils:
Chopping knife
Medium/large Frying pan
30 x 22cm baking tray (approximately)


The recipe:

1) Preheat your oven to 200°C/ fan oven 180°C/ Gas 6.

2) Heat the butter and 1 tablespoon of oil in a pan and then add the onions. Season with salt and pepper and fry for roughly 10 minutes until caramelised. Add the sugar and balsamic vinegar and cook for a further 10 minutes, until the juices are reduced and syrupy. Leave to cool (5 minutes or so)

3) Roll out the pastry on a floured surface and use it to line a 30 x 22cm baking tray.

4) Cover the pastry with the onion mixture and scatter over the crumbled cheese, peppers and olives. Drizzle 1 tablespoon of olive oil over the dish.

5) Bake for 20 minutes until the pastry is risen, golden and the base is crisp. Scatter over the basil leaves and cut into six portions.
