Maple Syrup, Bacon, & Poached Egg Bagel

I discovered this recipe a few years ago in a brunch cookbook, and ever since I have been in love with it! It's easy, fairly quick to do and so yummy! It's perfect as a special occasion breakfast/brunch, and with Valentine's day approaching, I thought I would give it a share!

You will need some bagels, plain soft cheese (Philadelphia works best), bacon and maple syrup. I've added some eggs and an avocado, but they are not essential.
I went to Aldi to get my ingredients and it meant that it cost just over a £5er for all of that. I don't normally go there but they seem to be popping up all over the place so I wanted to see what all the fuss was about.

 
Now, I'm no Nigella so you'll have to bare with me as I teach you how to make this, but I promise it'll be worth it!

  • Firstly, Put a frying pan on a medium-hot heat (I used a griddle pan for this and didn't add any butter/oil as the bacon gives off quite a lot)
  • Once the pan is hot, place the bacon in (don't touch it! - you can find this out by placing a bit of bacon on the pan and it'll start to sizzle if it's ready)
I was cooking for more than two people when I did this which is why I have about a million pieces of bacon! Cook as much as you want, generally 2 pieces per half bagel.
      
  • While the bacon is cooking, cut the bagels in half and get the toaster out. Start toasting the bagels, one at a time.
  • If you want to keep your bagels warm then pre-heat your oven to 100 degrees, and pop them in after they have been toasted, while the bacon cooks.
  • If you want a poached egg with your bagel then boil some water, get a deep frying pan and add a table spoon of white malt vinegar. Add the water to the pan once it's boiled and crack an egg in there, put it on a medium heat. Click HERE to find out how to poach an egg.
  • Now is the perfect moment to cut up an avocado, or garnish the plate with spinach, while everything else cooks.   
  • Once the bagels are toasted, and the bacon is almost done, spread some cream cheese on them.
  • Then add the bacon to the bagels and plate them up.

  • The final (and best part) is to add maple syrup! Add as much or as little as you wish! Enjoy!
